Origin:A wine of limited production sourced from a selected, small vineyard, part of the private owned vineyard of the Hatzimichalis Estate, in Atalanti Valley, Central Greece.
Vinification - Maturation:Long, cold prefermentation maceration and fermentation in temperature-controlled stainless steel vinifivator. Ages for 12 months in new, French, oak barriques and 36 months in the bottle before its release.
Alcoholic strength:13% Vol
Ageing potential:Recommended for long ageing.
Tasting notes:Deep, bright ruby colour. Complex bouquet in the nose where aromas of ‘juicy’ red fruits and characteristic, light vegetal and earthy notes are combined harmoniously with the slightly spicy character and the vanilla hints framed by oak flavors. Dense aromas of red fruits and tobacco are present in the mouth. A luscious, rich and lively wine with velvety power and generosity.
Food pairing – Serving temperature:A wonderful accompaniment to Greek and Oriental cuisine. Try it with pork with red cabbage, dishes with wild mushrooms and mild cheeses. Best served at 16 - 18 °C.
