Viniculture

Terroir – Chora

The exquisite quality of Hatzimichalis wines is attributed to a successful combination of grape variety and what is called terroir (or chora according to the ancient Greek writer Theophrastos), i.e. the combined effect of soil and microclimate.

The chora of the Hatzimichalis Estate is made up of advantageous terroirs in the broader region of Atalanti, at various altitudes, with the correct exposure to sunlight and a soil that lends itself to viticulture.

The local microclimate is characterised by mild winters with no frost, while in summer the sea breeze and the cold currents from Parnassus help the grapes to remain healthy and ripen.

Day by day and plant by plant, our varieties are cultivated with the utmost care and attention.
The grapes from each variety and at each vineyard are harvested at different times, as determined by their special requirements but also by the specific climate conditions which affect their ripening.
